Max is a Butcher by trade. Learning the art of Butchering in his native Angel’s Camp he then wandered south to work his craft at The Meat House. Fellow Monger Valencia was the keeper of a single case that housed artisan cheese and once Max sampled the PIAVE, he was hooked, needed to learn more and vowed to be come the C. Columbus of the cheese world. Max also enjoys craft beer, the Cachapas (sweet corn pancake stuffed with queso fresco & crema) at Mil Jugos in Santa Ana, the original version of True Grit, and sharing carefully crafted cheese plates with friends or sometimes alone in the peacefulness of his backyard.
